This hands down is one of the nicest meals I've ever made 😍 464 cals | 31g protein | serves 3 - 300g chicken, diced - 1/2 onion, chopped - 1 cup mushrooms, sliced - 1 spring onion , chopped - 2 tbsp soy sauce - 1 1/2 tbsp peanut butter (plain or chunky) -2tsp sweetener - 1/2 tbsp rice vinegar - 1 tsp sesame oil - 2 tbsp water - Squeeze of lime juice - 150g of egg noodles 1. In a large bowl, mix peanut butter, soy sauce, lime juice, vinegar, chilli and sweetener 2. Cook your noodles according to package instructions or until chewy to your liking. 3. In a pan, cook the sliced chicken until it's no longer pink, then add the sliced onions and mushrooms and cook until they're tender. 4. Drain the noodles from the water and immediately add them to the pan. Mix well to coat the noodles evenly. I sometimes still think about some of these moments, and how badly I wanted to shrink and disappear.
