Have you ever eaten Banh Uot before? The name directly translated is “Wet Noodles”, and it’s often overshadowed by its cousin - Banh Cuon. Banh Uot doesn’t have any fillings, though, and is usually served with cha lua, cucumbers, bean sprouts, herbs, and nuoc cham; and in my opinion, it is just as good! As a wee lad, one of my first kitchen tasks was separating the store-bought noodles for my family whenever we ate them at home. @ginger.scallion.seattle makes the best Khao Soi, and I had the honor of stepping into their kitchen, learning how to make it from scratch, and adding my own spin to it! The inspiration comes from Culinary Class War’s Shrimp Dim Sum, but instead of wonton wrappers, using the egg noodles to coat the shrimp balls just made perfect sense. The way the crispy shrimp balls soak up that broth and perfectly complements the bowl, while still allowing the soup to be the star of the show, makes it perfect - and if you ever watched Kuroko, the shrimp ball is the shadow that allows the broth to shine even further. Every time I post some variation of a Vietnamese braised pork dish, I’ll get multiple comments saying I forgot the eggs. And look, I love thit kho trung, probably more than anyone else, but I promise you, you don’t need it in every single one. There are so many incredible versions of this braised pork that can include tofu, mustard greens, shrimp, and one of my favorites, bamboo shoots. The bamboo has a really unique texture and bite to it and adds an earthiness to the overall dish. Be warned, though, if you’ve never eaten or cooked with bamboo before… the smell can definitely be a little bit surprising, to say the least.
